Leftover Recipe: Banana Cake
If you often get left with 'spotty' bananas which no one will eat, try this simple cake which keeps well and is a tasty treat for the whole family.
Ingredients
> 2 cups
self raising flour
> 1/4 cup of soft or melted
butter
> 1/4 cup of
sunflower or
vegetable oil
> 2
free-range eggs
> 1 cup of
honey
> 1 tsp
vanilla or
almond essence
> 1 tsp
baking powder
> 1/4 cup of chopped
dried fruit (or nuts if preferred)
> 2-3 mashed
bananas
Measured in cups, where 1 cup is the equivalent of 8 fluid ounces.
Method
Rub or mix the butter into the flour.
Mix the wet ingredients together and pour into the dry ingredients, stirring all the
time.
Mash the bananas and add them to the batter, mixing them in well
(don't leave lumps otherwise they will sink to the bottom when you cook
the cake).
Grease and flour a loaf tin and pour in the batter.
Bake at 180 C (gas mark 4) for approx 1 hour, or until the cake tests done (i.e test it by
sticking a knife in - if the blade comes out clean, the cake is ready - if sticky, give it a little longer).
Check after 30 mins - if the top starts browning too quickly, cover with a piece of grease-proof paper to prevent burning.
Variation: Use
wholemeal flour if you feel healthy...you will need to use a raising agent (
baking powder) though.
