  • Made without wheat - soya Suitable for vegans Gluten & wheat free white self-raising flour blend. A flour blend milled from naturally gluten and wheat free rice, potato, tapioca, maize & buckwheat. This is an alternative to everyday self raising wheat flour which will require a little extra liquid in most recipes. 'We are passionate about home baking and also believe that what we eat today will effect our health tomorrow. As well as being a satisfying and rewarding activity, when you bake at home you can select the best quality, local and seasonal ingredients, and be certain of what has gone into your food. You and your family will enjoy great tasting home made food. We often double the recipe and when baked, freeze half to eat at a later date. 'In our mill we make a large range of flours from many different natural grains, beans & seeds without adding refined gluten or enzymes. We blend specific grain varieties to ensure that the resulting flour has the optimum characteristic for the type of baking it will be used for. This means soft wheat varieties for cakes, pastry and sauces or stronger hard wheat for bread making flours. The more unusual flours have distinctive characters and applications of their own. If you are on a special diet look out for those flours that suit your situation. "This flour was designed to be used in place of wheat flour so the whole family could enjoy eating the same thing at meal times. It is very absorbent so add a little extra liquid when following your own recipes." Clare & Michael, Doves Farm

  • Organic Stoneground from an ancient relative of modern wheat, spelt will add delicious complex flavours to all your baking. Baking with Spelt Flour Wholegrain spelt flour will be delicious in your favourite wholemeal recipes. Spelt breads will naturally prove and rise more quickly than those made with conventional wheat flour, so reduce rising times and bake as soon as the dough has doubled in size rather than the timing given in standard bread recipes At Doves Farm we make biscuits, cookies, snack bars and a large range of speciality flours. Spelt, or tritium spelta, is an ancient relative of the modern wheat, which we have been growing on our farm since 1996. First cultivated over 9,000 years ago, it is a cousin of modern wheat. Spelt warrants a mention in the book of Ezekiel in the Bible, as well as being favoured by mystics and herbalists throughout history. Legend has it that the Roman army called spelt their 'marching grain'. To make wholegrain flour, the inedible outer husk is removed, leaving the inner bran and grain intact. Wholegrain Spelt flour has a deliciously complex flavour and is excellent in specialist breads or luxurious cookies. Doves Farm Foods was established in 1978, when we wanted to make flour from the organic wheat we grew. We brought a millstone and set it up on the barn on our farm on the picturesque Wiltshire/Berkshire border. We now have a thriving busness which mills many different and rare grains. At the hearts of our ethos, we are dedicated to ethical production methods, slow food and the organic movement. On our farm we rotate crops, livestock and grassland, as well as respecting the biodiversity of wildlife and the local environment. We have had Soil Association organic certification for over 30 years. We are also passionate about home baking and believe that wheat we eat today will affect our health and well-being tomorrow. Baking bread, cookies and cakes at home is satisfying and rewarding activity. You can choose the best, local and seasonal ingredients, and know what goes into you family's food. Spelt, triticum speltum, was widely grown in Roman times. It is an ancestor of modern wheat and its genetic heritage is a cross of wild grasses and early cultivated cereals.

  • Organic Stoneground from whole grain this 100% rye flour is naturally low in gluten, producing close textured bread and cakes with a pleasing continental flavour. Baking with Wholemeal Rye Flour Rye flour is low in gluten and typically produces a slightly sticky bread dough and loaves with a close crumb structure and full bodied flavour. It is often combined with strong bread flour for lighter loaves. At Doves Farm we make biscuits, cookies and a large range of bread, cake and speciality flours. Rye grain has been cultivated at Doves Farm for many years and grows well on chalk and flint downlands. Traditionally farmers grew rye on land not suitable for wheat and occasionally planted wheat and rye together hoping one or the other would thrive. Rye flour is naturally high in gliadin but low in glutenin resulting in a lower gluten content than wheat flour thus producing characteristic, close textured, flavoursome bread and baked goods. Doves Farm Foods was established in 1978, when we wanted to make flour from the organic wheat we grew. We bought a millstone and set it up in the barn on our farm on the picturesque Wiltshire/Berkshire border. We now have a thriving business which mills many different and rare grains. At the heart of our ethos, we are dedicated to ethical production methods, slow food and the organic movement. On our farm we rotate crops, livestock and grassland, as well as respecting the biodiversity of wildlife and the local environment. We have had Soil Association organic certification for over 30 years. We are also passionate about home baking and believe that what we eat today will affect our health and well-being tomorrow. Baking bread, cookies and cakes at home is a satisfying and rewarding activity. You can choose the best, local and seasonal ingredients, and know what goes into your family's food. Since the middle ages rye grain, secale cereale, has been widely cultivated in Central and Eastern Europe and used for traditional bread making.

We rotate crops, grassland and livestock to develop natural soil fertility & create natural habitats for wildlife conservation. Rice and maize, also known as corn, are the most popular cereals produced on planet earth. Globally we produce 600 million tonnes of maize and 400 million tonnes of rice each year. The rice and maize used to make these appealing crunchy flakes was grown by dedicated organic farmers and ripened under the Italian sun until perfect for harvesting. Organic rules limit artificial agricultural inputs & food additives and thankfully do not permit genetic engineering. I hope that you will enjoy the crisp texture of Fibre Flakes.
