Description
Our pork is butchered by hand using a tunnel boned method, this leaves on both the fat and the rind to maximise the flavour during cooking. Our pork legs are dry cured for 14 days with curing salts moreand brown sugar to develop the meats succulence and flavour. The cured legs are then slowly cooked and roasted. Once chilled the rind is removed, the ham is then carved by hand. less
