    Kamut® grain is a khorasan wheat, triticum turgidum. Said to be the wheat of the Pharaohs, the crop produces bold golden ears of grain with striking long back awns or whiskers.

Khorasan wheat, triticum turgidum, is a hard wheat type whose origins can be traced back to the Fertile Crescent in Egypt where it is thought early agriculture first developed. With large golden grains, twice the size of many modern wheat varieties, it mills into a soft wholegrain flour with a pale, creamy colour. The Kamut® trade mark was introduced in 1990 to protect and preserve the exceptional quality of this ancient wheat and indicates that licensed seed was grown by organic farmers in North America and the flour was processed under Kamut® certification.

Legend has it that the Roman army called spelt their 'marching grain'. To make wholegrain flour, the inedible outer husk is removed, leaving the inner bran and grain intact.     What is Spelt? Spelt is an ancient grain that has been grown in Somerset since the start of the Iron Age. It's a cross between emmer wheat and goats grass, with a delicious nutty taste, and is different to common wheat in that the body finds it easier to digest.     The History of Sharpham Park For well over 1000 years, Sharpham Park has had a rich agricultural heritage, sustaining Abbots, Kings and Noblemen. It's now the family home of Roger Saul, founder of the British designer brand Mulberry. The farm is set like a jewel in the heart of the rich, lush pastures of the Somerset Levels. The spelt fields have 6 metre margins and the hedgerows are only cut every other year, allowing wildlife such as hare, lapwing, dormice, bees and ladybirds to shelter and forage for food all year round. And we are proud to say that this flour is fully organic, which means no pesticides, herbicides or harmful chemicals are used in growing our spelt, allowing nature to take its own course.

It is here that the art of traditional milling lives on. Today, the Scott family maintains the Watermill with its Overshot Waterwheel and French Burr Millstones, crafting flours of exceptional and multiple, award winning quality. Much of the equipment used dates back hundreds of years and is carefully maintained in order to produce the finest flour possible. Time is taken to source the best grain which is stoneground slowly and gently in order to produce flour that retains all the natural goodness of the wheatgerm.     Stoneground Flour Ground from a wheat grain widely used in prehistory, this flour will give taste and character to your baking.
    Einkorn, triticum monococcum, is the earliest type of wheat grown & eaten by mankind. The tall elegant stalks produce a flat seed head with two symmetrical rows of very small grain.
    Einkorn or triticum monococcum, was the original wheat, developed over 20,000 years ago. It became a diet staple a cross the Mediterranean because of its ability to survive on poor soils where other species of wheat fail. It eventually disappeared from fields in Roman times when other varieties of wheat became popular due to their bigger yield and easier processing. We have been growing einkorn on our farm since 2008 and think the flour is perfect for bread baking. It grows on tall stalks which are distinguished by their short, flat, two row seed head which enclose small grains in an inedible husk. After harvest we remove the husk and mill the grain into a soft golden flour on our millstones. Doves Farm Foods was established in 1978, when we wanted to make flour from the organic wheat we grew. We bought a millstone and set it up in the barn on our farm on the picturesque Wiltshire/Berkshire border. We now have a thriving business which mills many different and rare grains. At the heart of our ethos, we are dedicated to ethical production methods, slow food and the organic movement. On our farm we rotate crops, livestock and grassland, as will as respecting the biodiversity of wildlife and the local environment.     The wheat varieties Bartholomew, popular in the C16th and April Bearded, widely grown in the C17th, originated from seed libraries and have been multiplied to create a heritage wheat grain blend.
    Our Heritage flour is milled from a blend of old wheat varieties. Some of the original wheat seeds in the blend were identified as Bartholomew, which was popular in the 16th Century and April Bearded - grown commonly in the 17th Century. Since 2007, we gave been replanting and growing these varieties on our farm. Once the wheat has been harvested, we mill it into a hearty brown flour which is excellent for use in biscuits and cakes. It bakes into a dark, wheaty artisan loaf - similar to the bread eaten hundreds of years ago. Doves Farm Foods was established in 1978, when we wanted to make flour from the organic wheat we grew.
